Raspberry Chocolate Cheesecake Smoothie from Joy McCarthy’s Joyous Health
¼ cup raw cashews
1 cup fresh or frozen raspberries
1 scoop vanilla plant-based protein powder (or ½ teaspoon pure vanilla extract)
2 tablespoons raw cacao or cocoa powder
2 tablespoons chia seeds
1 cup coconut milk
Filtered water, just enough for desired consistency
1 teaspoon raw cacao nibs
1. Soak the cashews in filtered water for about 30 minutes to 1 hour; drain.
2. Place all ingredients except cacao nibs in a blender. Blend for 30 to 60 seconds, until smooth. Pour into a glass and sprinkle with cacao nibs for a nice crunch.
