Want a great new breakfast recipe? Tired of normal cereal or processed granola bars? Try this natural and delicious breakfast bar recipe that is perfect for the fall!
1 1/2 cups rolled oats
1 tsp baking powder
1/2 cup raw, unsalted pumpkin seeds without shells (we only had seeds with shells when we made this recipe, which is harder to eat that way, so make sure your pumpkin seeds are de-shelled)
2 Tbl ground flax meal
2 Tbl flax seed
2 Tbl coconut flakes
1 tsp pumpkin pie spice
1 tsp coconut oil (melted)
1 tsp pure hazelnut or vanilla extract (no alcohol)
3/4 cup of almond milk
2 Tbl pure agave syrup (maple syrup works too)
1/2 cup of pumpkin puree
1/3 cup coconut sugar
Preheat your oven to 375 degrees F. Lightly grease an 8x8 baking dish. Set aside.
Combine all your dry ingredients in a bowl. Mix well.
In a separate bowl, mix all your wet ingredients together.
Mix your wet and dry ingredients throughly together.
Once your mixture is well combined, add it all into baking dish and spread the mixture evenly.
Bake for 30-35 minutes (until browned).
Let cool for about 20 minutes. Then cut and enjoy.
